Avocado + Mango = Salad Bursting with Mouth Watering Flavours

MangoAvoSal

1 ripe manago, peeled and sliced
1 ripe avocado, peeled, seeded and chopped
1-2 Tbsp red onion, chopped
1-2 Tbsp cilantro, chopped
1 handful of raw cashews
1/2 lime juice
1/2 tsp olive oil
pinch of salt

Mix all ingredients in a large bowl and enjoy!

Fuss-Free Carrot Cake
A delightful carrot cake with a guilt-free “cream cheese” icing!

Carrot Cake6 medium carrots, chopped
2 large apples, peeled and chopped
1 cup dried apricots, soaked 1 hour
1 cup raisins, soaked 1 hour
1 cup dried coconut
1 tsp cinnamon
1/2 tsp dried ginger
1/2 tsp ground nutmeg
1/4 tsp cardamom
1/2 tsp orange zest

In a food processor, process carrots and apples. Transfer to bowl. Next, process apricots and raisins, adding to the carrot mixture. Mix in the remaining ingredients by hand. Press into spring form pan and refrigerate while preparing the icing.

Cashew Cheese Icing
1 cup raw cashew, soaked 4 hours
1/2 cup purified water
2 Tbsp raw agave nectar
juice of 1 lemon
2 Tbsp shredded coconut

Blend cashews with water, agave, and lemon juice until creamy, adding more water if necessary. Spread icing on cake and top with shredded coconut and sprinkle with cinnamon (optional). Serves 8

Mango Mornings

mmm…Mango Mornings
According to Ayurvedic Medicine, ripe mangos are balancing to all constitutions and are a rich source of vitamin A and C. Mango is useful in cancer prevention as well as a tonic for the skin and all tender tissues. Mangos are very soothing and beneficial for the gut and throat. For centuries, they have been used for scurvy, roundworms, diarrhea, and chronic dysentery.

1 medium very ripe mango
2 tsp flax seeds
1 tsp non-GMO lecithin (optional but great for smooth silky texture)
slice or two fresh ginger

Blend all ingredients at the highest speed for 1 minute or until smooth.

Note: Lecithin is a naturally occurring compound in all cells in the human body, plants and animals. It plays a major role in almost all biological processes including nerve transmission, breathing and energy production. This nutrient helps to prevent arteriosclerosis, protects against cardiovascular disease, improves brain function, and aids in the absorption of thiamine by the liver and vitamin A by the intestine. Lecithin enables fats, such as cholesterol and other lipids, to be dispersed in water and removed from the body. In other words, the vital organs and arteries are protected from fatty buildup.

Cream of Carrot Soup – Hearty yet uncooked
Great for those hot summer days when heating up the stove is less befitting.

2 cups pure water
3 medium carrots
1-2 tsp chopped ginger
1 medium local apple
1 avocado
1-2 Tbsp lemon juice
1/2 – tsp curry powder
1 tsp whole cumin seeds
1/2 tsp whole coriander seed
1/2 tsp Celtic sea salt of Himalayan rock salt
2 dashes cayenne powder

Pour the water in a blender. Add coarsely chopped carrots and ginger, cored and chopped apple, spooned out avocado. Squeeze and add the lemon juice. Add all the spices and salt. Blend until smooth. Serve with fresh herbs.
